Farkay Noodles
This recipe came from Auntie May when she visited us from Vancouver in the early 1980's while we were living on Gagnon Steet in Winnipeg. I have modified it over the course of time but the ingredients and flavour remain the same.
Ingredient amounts will vary according to the size of the plate of noodles being prepared.
Boil the Farkay Noodles according to the directions on the package. Do not overcook. Auntie May used to drain the noodles and place them in a sink of iced water. I just run them under cold water and let them drain. Then spread them out on a tea towel and allow to dry for 20 minutes or so. At this time, I put them in a shallow pan or plate that will fit into the microwave. Add oyster sauce and use chopsticks to ensure noodles have a coating. Place in microwave and heat at medium-high setting to heat thoroughly. Cut green onions diagonally and root ginger into matchstick pieces. Heat peanut oil (probably about 1/4 cup for a medium size plate of noodles) until smoking over high heat in a heavy pan. Remove noodles from the microwave and cover with green onions and ginger. Pour peanut oil over the dish to infuse the flavour of the green onions and ginger into the noodles. Toss with chopsticks and serve hot.
