Ingredients 4 lbs oxtails 1/2 cup flour 1 tsp salt 1/4 tsp pepper 2 tbsp. oil 6 cups water 4 carrots in 1 inch pieces 3 potatoes cubed 1 turnip cubed 1 onion sliced 1 cup celery sliced 2 tsp salt 2 beef bouillon cubes 1 bay leaf Trim excess fat from oxtails. Coat oxtails with mixture of flour, salt and pepper. Heat oil in large pan or Dutch oven. Brown meat. Add water and heat to boiling. Reduce heat, cover and simmer for 2 hours. Turn off and skim off excess fat with turkey baster or spoon. Add the rest of the ingredients, bring to boil and simmer another hour or until the oxtails are tender
