Pickled Beets
4 qts small beets
2 cups water
2 tsps. whole allspice
1 tsp. whole cloves
3 cups vinegar
2 1/2 cups sugar
1-2 sticks cinnamon
1 1/2 tsps. salt
Wash beets, cut off all but 1 inch of stem leaving roots intact. Cover
with cold water, bring to boil, cook until just barely tender, about 20 to
30 mins. Drain and plunge into cold water. Slip off skins and trim any woody
parts. Combine remaining ingredients, bring to boil for about 5 mins. Add
beets, bring just to scalding point. Pack beets into sterilized jars, cover
with hot syrup, seal immediately. Makes 3-4 qts.
